OK, so today, I was so tired of being on the computer and I decided I need to bake some kind of bread to take with me up to PA- sounds good, right?? I've had a bag of Amish Friendship bread lurking around my kitchen for a few weeks, (you know that stuff never goes away!) So, I was going to make it, then I remembered I had ZERO eggs. Not to be deterred, I googled "eggless bread" and low and behold, a ton of recipes! So, I grabbed
this one- Eggless Banana Bread. Sounded delicious, got good reviews, and so I got started. Mixed all the ingredients- well, almost all of them- didn't have applesauce, so I substituted oil and didn't have 3 bananas, only 2- not a problem, it'll be just fine! (I thought!) And then I decided to add some cocoa powder instead of chocolate chips. So
YES, this ended up being a huge experiment. I decided to make little mini muffins instead of the loaf too. Stuck it in the oven and it began smelling awesome!
This is what they looked like when they came out of the oven- not great, but not horrible either. I gave them a few minutes to cool and then tried one...
...sadly, this is what happened when I took it out of the pan :(
It didn't actually taste too bad, but some extra flour probably would have kept them together a little better- I think the oil made it less cohesive! Maybe once they cool they'll be better!
Oh, well, you live and learn right :)

you're crackin' me up! i would have stopped with the eggs...or called linda to see if she had any! ;) what's w/ the febreeze stuff? did i miss something?!
